Dr Parackal is a Public Health Nutritionist and Senior Research Fellow at the University of Otago, New Zealand. Dr Parackal is Lead Researcher for NCD Epidemiology and Prevention, at the Centre for International Health. Dr Parackal’ s research focuses on the epidemiological investigation of diet-related non-communicable diseases in Asian and other migrant populations. She is currently the principal investigator of the Aotearoa Ethnic MIGRant heAlth TrajEctory (EMIGRATE) project which aims to improve visibility of the health needs of ethnic minority populations in NZ.

She is also the principal investigator of the South Asian heart disease risk reduction project which aims to understand the health beliefs and behaviours related to diet, activity, and medicine usage among South Asians at risk of developing cardiovascular diseases.

Dr Parackal has completed eight Asian and migrant health projects in NZ and has supervised several students on various issues impacting migrant health ranging from dietary patterns to barriers to health care access. You can find more information on current projects and publications on
